You can eat carbohydrates andstay lean, it is all about nutrient timing! Pre and post workout are a great time to consume your carbohydrates. Today, as promised, I have a great recipe for you. These delicious bars contain protein and carbohydrates.
Protein bars are a convenient way to eat on the run, however most pre-packagd versions are loaded with additives and are way too high in digestive triggers that irritate my stomach! Therefore I make my own! By poular demand here is my recipe.

Carrot Cake Protein Bars
- ¬Ω cup coconut flour
- ¬Ω cup rice flour
- 4scoops vanilla protein powder
- 2 tsp cinnamon
- 2 tsp all spice
- 1 tsp gluten free baking powder
- 6egg whites (from 700gram eggs)
- 1-2 tbsp of agave syrup OR 1 tbsp stevia (sweetener is based on preference)
- 200grams of grated organic carrots
- 150ml water (may add more water if consistency is too thick.)
Line a 20cm x 15cm (approx size) baking tray with coconut oil and then baking paper cut to size.
Preheat oven to 180 degrees in a fan forced oven.
Mix all dry ingredients together in a bowl. Mix egg whites, carrots and water in a bowl.
Add wet ingredients to dry ingredients and mix together. Alternatively add all ingredients to a food processor and mix on a low speed until smooth. If mixture is too thick add more water.
Transfer the mixture into your pre-prepared baking dish and bake for 20 – 25 minutes, checking after 20 minutes by poking a skewer in the centre to see if it comes out clean, if not place back in for another 5-8 minutes until cooked through.
Makes approx 15 squares.
